What are Pine Nuts?

The thought of pine nuts stir up thoughts of bright, green pesto sauce poured over homemade pasta and served with a bottle of wine during the brisk summer months. Between layers of the cone are the nuts, which hide under a shell which needs to be removed. The pine nuts can take anywhere from eighteen months to three years to mature and will grow through the summer months. The pine tree is native to Asia, Europe and North America, with over 20 species identified!
